Five-Cheese Lasagna Recipe

Lasagna – the ultimate pasta comfort dish, and famously loved by Garlfied (and me!)
It’s hard to imagine a classic lasagna recipe without lots of luscious cheese. Three of the most common types of cheese found in traditional lasagna recipes are mozzarella, ricotta, and Parmesan. This recipe builds on this delicious cheesy foundation with the addition of freshly grated Asiago and shredded Gruyère.
You can use your own meat sauce, or from a jar, or try the recipe for our Italian Meat Sauce. Make sure to allow time for that part of the recipe, especially if using our sauce as it needs 3-4 hours of simmering time (but is oh so worth it!).
You could also replace the meat sauce with a veggie sauce instead of a vegetarian option.

Ingredients & Equipment Used In This Recipe
While most ingredients can be bought in grocery stores, for your convenience, any specialized or notable ingredients and equipment needed for this recipe have been linked to Amazon or other stores if available online.

- Fresh Produce – Parsley
- Dairy – Ricotta, Mozzarella, Gruyère, Parmesan, Asiago. If you have problems sourcing Asiago, you can substitute with Pecarino Romano, Swiss Cheese, or even a Mild Cheddar.
- Meat Sauce – either from a jar, your own homemade sauce, or try our One-Pot Chunky Italian Meat Sauce Recipe
- Lasagna Noodles – you can use either the no-boil or boil kind. I prefer the latter, as I find even though the no-boil kind is made to be use immediately, the pasta just doesn’t quite cook right.
- Italian Seasoning – this recipe uses store-bought Italian Seasoning, but it is so easy to make your own herb mixes, especially if you already have a bunch of herbs and spices in your pantry already. Just mix equal measures of dried basil, oregano, rosemary, parsley, and thyme. You can also add a pinch of garlic granules or powder as well as red chili flakes if you like. Store in an airtight jar and use in recipes as required.

I try to give American, imperial, and metric measurements in my recipes. Please note, you can mix cup measurements with weighted measurements, but never mix imperial (pounds, ounces, pints, etc.,) with metric (kilograms, grams, litres, etc.,).

Recipe Tips
- This recipe is easier to prepare if you have the meat sauce prepared ahead of time. (If you don’t have the time or inclination to do so, use your favorite prepared pasta sauce instead).
- Fortunately, our One-Pot Chunky Italian Meat Sauce Recipe referred to in the recipe card can be made in large batches that freeze beautifully for future use.
- For best results, pulse 4 cups of the chunky meat sauce in a food processor to get a more even consistency prior to using in this dish.
- The key to keeping lasagna from getting soupy is to make sure your noodles are thoroughly dried before assembling.

The Best Five-Cheese Lasagna Recipe
Ingredients
- 4 cups meat sauce homemade or from a jar
- 12 lasagna noodles cooked according to package instructions and dried thoroughly
- 1 24-oz/680g container ricotta cheese
- 1 egg beaten
- 3 Tbsp Italian seasoning divided
- ½ cup fresh parsley chopped, plus extra for garnish
- Sea salt and black pepper to taste
- 8- oz 225g mozzarella cheese, shredded, divided
- 8- oz 225g Gruyère cheese, shredded, divided
- ¾ cup Parmesan cheese freshly grated, divided
- ¾ cup Asiago cheese freshly grated, divided
SUGGESTED PRODUCTS
Instructions
- Pre-heat oven to 190°C/375°F/Gas 5.
- In a large bowl, combine ricotta cheese, egg, 2 tablespoons Italian seasoning, and fresh parsley. Season with salt and black pepper, to taste. Stir to combine and set aside.
- Spray a 13 x 9” glass baking dish with non-stick cooking spray. Add enough meat sauce to cover the bottom of the pan in a thin layer and then cover with 3 lasagna noodles. Top with an even layer of the ricotta cheese mixture, followed by a layer of shredded mozzarella and Gruyere cheese, using equal amounts of each. Finish with a thin layer of grated Parmesan and Asiago cheese, also in equal amounts.
- Repeat this process three more times: meat sauce, noodles, ricotta mixture, shredded cheeses, and grated cheeses. Sprinkle the remaining Italian seasoning across the final layer.
- Loosely tent dish with aluminum foil and bake for 30 minutes. Remove foil and continue baking for another 20-25 minutes. Remove from oven and rest for 20 minutes before slicing. Serve topped with some freshly chopped parsley, if desired. Enjoy!
