Spiced Tomato and Coconut Soup

Spiced Tomato and Coconut Soup.

Ingredients:

  • 1 tin chopped tomatoes in tomato juice – 400 grams
  • 1 tin coconut milk – 400 ml
  • 1-2 green chillies
  • 1 inch root ginger
  • 1/2 tsp granulated sugar
  • Salt to taste
  • 100 ml water
  • 1 tbsp chopped coriander leaves

For the tempering:

  • 2 tsp ghee
  • 2 tsp whole cumin seeds
  • 2-3 pinches asafoetida powder

Method:

  1. Coarsely chop the green chillies and the ginger into chunks and place them in the blender along with the tinned tomatoes. Add water and blitz together to form a uniform mixture.

  1. Transfer this mixture to a saucepan. Stir in the coconut milk. Add the salt and the sugar. Bring to a boil on a medium to high heat.

  1. Start making the tempering while you wait for the spiced tomato and coconut mixture to boil. Take 2 teaspoonfuls of ghee in another small saucepan. Heat on a medium flame till all the ghee melts. Now add the cumin seeds. You will see them bubble and splutter. Add the asafoetida to the ghee. Let the spices fry in the warm ghee for a couple of minutes till you start smelling their aroma.

  1. Your spiced tomato and coconut mixture should have boiled by now. Pour the hot tempering into the mixture and stir through. Let it carry on boiling for a couple more minutes. Continue to simmer on a low heat for another 7-8 minutes, allowing the tempering to infuse through the soup.
  2. Remove from the heat and stir in the chopped coriander leaves.
  3. Ladle out in a bowl and enjoy your hot spiced tomato and coconut soup.
