Goat Cheese Breakfast Casserole
Ingredients
- 2 tablespoons olive oil
- 1 onion diced
- 1 green bell pepper diced
- 1 red bell pepper diced
- 12 ounces mushrooms chopped

- 2 cups frozen peas
- 12 large eggs
- ½ cup milk
- 1 cup cottage cheese or sour cream
- 5 ounces goat cheese crumbled
- 1 cup mozzarella cheese shredded
- Cooking spray or additional olive oil for greasing
