Rum Caramel Banana Pancakes

In fact, in that post from 2013, I promised to make better pancakes next [now this] year, and I think I’ve fulfilled that promise with my Rum Caramel Banana Pancakes!
I was sent a sample of Appleton Estate Rum to use in a pancake recipe…

…and here is how to make my yummy, sweet rum flavoured banana and caramel sauce/topping for your pancakes, which, quite frankly can be eaten anytime of year, not just Pancake Day!
Rum Caramel Banana Sauce/Topping
Ingredients
- 30 g unsalted butter
- 50 g light soft brown sugar
- 2 bananas sliced
- splash of rum
Instructions
- In a small frying pan, melt the butter and then add the sugar.
- Stir quickly to mix together and then add the bananas.
- Toss together until all the bananas are coated – for about a minute or so.
- Add a splash of rum (how much you want to use is up to you!) and flambé the bananas and carmamel by setting light to it with either a long match, or by tipping the pan to catch the gas ring (if you have a gas hob). After a few seconds the flame will go out.
- Serve over warm pancakes, on their own, or with cream or ice-cream.

Perfect Pancakes
Ingredients
- 110 g plain flour
- 2 eggs
- 275 ml milk
- oil for frying
Instructions
- Sift the flour into a bowl and make a well in the centre.
- Crack the eggs into the well and start to whisk the eggs into the flour.
- Gradually add the milk, whisking all the time to combat any lumps.
- Make a test pancake first to judge how much you need. Heat a frying pan until hot and add a drop of oil (I use spray oil) then add the pancake batter.
- Swirl around the pan and after about 30 seconds you should see that you can lift the edges of the pancake. Flip over with a spatula and cook on the other side for about 30 seconds. Slide onto a warm plate and continue with the rest of your pancakes.

I find that the first one is always rubbish and the key is a hot pan – by the third and fourth pancake you often have it down! No matter how many times I make pancakes the first one or two are always throwaways, or rather, not perfect enough to roll up!
We are an ‘eat the pancakes as we go’ family, so all the toppings are out on the counter – classic sugar and lemon, syrup (golden and maple), chocolate spread, jam…and of course, my invention for this year of rum caramel banana and the hubs and the boy choose a topping and eat whilst I make more ^_^
Not gonna lie, the rum caramel bananas were the bomb! Nice and sweet, but not too sweet, and whilst alcohol is burned off when you flambé, there was still a warming rum flavour to the topping. I didn’t want anything else on my pancakes this year! Although, I did blob on some ice-cream that we had knocking about the freezer!

Your pancakes look fantastic! I am very impressed at the flambé! For the first time ever I made savoury pancakes – we had pea and ham flavoured with spices and they were delicious but we couldn’t have Shrove Tuesday without traditional pancakes too so we had crepes with lemon and sugar too and the little one had jam and banana. Delicious!

I missed pancake day son and hubby out late, daughter at uni so it was a Pancakeless Day. I will make them at the weekend, the rum and banana ones look and sound lovely. The rum looks a good one.

Oh yum, they sound delicious!! My favourite has to be the classic sugar and lemon but I do also really love American style with a few blueberries and a drizzle of maple syrup!!
