Every party needs some drinks…and my Year of the Dragon Chinese Banquet was no exception. I made some Jasmine Iced Tea and also bought some Chinese Tsingtao beer from the local supermarket.

The iced tea is very easy to make….all you need is some hot water, jasmine tea bags (which I found in our local supermarket), something to sweeten the tea with if desired – sugar, sweetener or honey, some lemons and some fresh mint. Oh, and some ice cubes!

Boil up a kettle full of water, and in a heat proof jug add 2 litres of water and drop in 6 teabags. Give it a quick stir and leave to brew for 3 – 4 minutes. Sweeten to taste with either sugar, sweetener or honey and leave to cool down before placing in the fridge to chill.

To serve, pour the tea into a serving jug, add lots of ice, slices of lemon and sprigs of mint.

Absolutely refreshing and you can really taste the jasmine – which is strange for me as I can never taste herbal teas! To me it tastes of the smell of Cyprus. I say this as a Greek-Cypriot girl who’s outstanding aroma memory of Cyprus is the smell of Jasmine bushes as I walked to my relative’s house!
