On Mother’s Day, hubs and my son set up a picnic in the garden. It was a lovely warm day, and my hubby being every thoughtful to my diet goals didn’t whip out the high fat, high cal foods, he sourced recipes to make healthy, but tasty options! That there is one of the reasons why I love that man!

One of the recipes was for fake Ferrero Rocher – or as I’ve now called them, Faux-rrero Rocher! These tasty treats were twice the size of a regular choc, and after working out the calories online, they are less than half the calories of two Ferrero Rocher! Two of the real thing are 146 calories, one of these big old Faux-rrero Rocher are 68 calories! Now, I know if you’re not watching the calories you can just go and buy a box of the real thing, but if you are watching the calories, then these hit the right spot!

There are just two ingredients and are so simple to make it’s ridiculous!

Ingredients
  

  • 20 Ryvita Original Crispbread
  • 200 g Nutella

Instructions
 

  • Crush the Ryvita by hand into small pieces or pop them in a food bag and smash them with a rolling pin.
  • Put the Nutella in a microwave proof bowl and soften in the microwave for about 20 seconds.
  • Add the crushed Ryvita to the melted Nutella and mix together well.
  • Scoop up some of the mixture and roll into small balls in your hands - about an inch and half or so wide. Wet your hands with cold water every so often to stop the balls from melting too much in your hands.
  • Place on greaseproof paper on a tray and place in the fridge to set.
