Easy Eton Mess

In case you don’t know what that is, Eton Mess is an English dessert made with cream, crushed meringue and strawberries. But you can use any fruit. I did hear (somewhere) that someone dropped a pavlova at Eton College and still served it, and Eton Mess was born! How true that is, I don’t know, but I like that story :D
I wanted to make it a little bit healthier, so switched out the cream for Greek yoghurt instead, to make it even lower fat, you could use a 0% Greek yoghurt.
The ingredients are simple…
- meringue nests
- Greek yoghurt
- fresh or frozen (defrosted) summer berries
- sugar to sweeten if needed
I haven’t given quantities because it doesn’t really matter, but to serve around 10 people I used 12 meringue nests, 2 x 500g pots Greek yoghurt and 500g frozen (and defrosted) summer berries.
Start by crushing up the meringue into pieces and placing into a bowl.
Fold through the Greek yoghurt. If you are using cream instead, use double or whipping cream and whisk up so that it holds soft peaks.
Sweeten the berries if needed, with a little sugar and stir through the meringue and yoghurt. Don’t over mix, you don’t want the yoghurt to turn completely pink.
Serve immediately and enjoy!
