Create Christmas 2018 is here, and today I’m sharing a recipe for a batch of scrummy Cinnamon Snowball Cookies. These are so quick and simple to make, and are both gluten-free and dairy-free. Instead of flour, ground almonds are used, and the cinnamon gives them a lovely festive flavour.

Cinnamon Snowball Cookies

This recipe for Cinnamon Snowball Cookies is a kosher recipe courtesy of my mother-in-law. They’re actually the cinnamon balls she makes for Passover, and I thought they would be perfect as a festive cookie too!

They also benefit from being gluten-free, dairy-free, and vegetarian (but not vegan as they contain egg whites).

Whether you celebrate Hannukah, Christmas or another winter holiday, these Cinnamon Snowball Cookies should be on your baking list for the season!

Making these Cinnamon Snowball Cookies is so easy! You will need egg whites, ground almonds, caster (superfine) sugar, and ground cinnamon. To turn them into snowballs you will be dusting them generously with some icing (powdered) sugar.

The egg whites are whisked until stiff – you could do this by hand with a balloon whisk, but I find a hand mixer is a lot quicker, and less taxing on your arm! Then the caster sugar, ground almonds, and cinnamon gets folded in until you can form a dough.

Prepare a baking tray/sheet by lining it with baking parchment/baking paper. You don’t want your snowballs to stick to the tray! 

Now make your cinnamon snowballs! Take small amounts of the dough and shape into balls about 2.5cm/1″ in diameter, and place on the baking sheet. Cook in a preheated oven (temperatures are in the printable recipe card below) for about 15 to 20 minutes.

Allow to cool slightly before dusting generously with icing sugar.

These will last for several days in an airtight container – but they really won’t last that long once you taste them!

They would also make a lovely festive gift for someone. Pile a batch of the Cinnamon Snowball Cookies into a cookie box or cellophane bag and tie up with some pretty ribbon and a gift tag.

Cinnamon Snowball Cookies

Yield: 20
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

The Cinnamon Snowball Cookies are both gluten-free and dairy-free. Makes approximately 20, but will depend on how big you make them!

Ingredients

  • 2 egg whites
  • 115g/4oz/½ cup caster sugar (superfine sugar)
  • 225g/8oz/1 cup ground almonds
  • 1 level tablespoon ground cinnamon
  • icing sugar (powdered sugar) for dusting

Instructions

  1. Preheat oven to 160C/320F/Gas 3
  2. Whisk the egg whites until stiff.
  3. Fold in the ground almonds, sugar and cinnamon.
  4. Form into a dough.
  5. Shape into balls, around 1" diameter.
  6. Place on a baking sheet covered with baking parchment.
  7. Cook for 15-20 minutes.
  8. Allow to cool slightly before dusting with icing sugar.
