Couscous Apple Salad
Ingredients
- 1 cup pearl couscous
- Sea salt to taste
- 2 Granny Smith apples
- 1 cup Italian parsley chopped
- 1 cup fresh dill chopped
- 6-8 fresh mint leaves chopped
- 6-8 fresh basil leaves chopped
- 1 lemon juiced
- ¼ cup extra virgin olive oil
Instructions
- Cook the pearl couscous in lightly salted water following the package directions until al dente. Drain if necessary and set aside.
