Cajun Chicken

Cajun Chicken
Ingredients
- 4 boneless, skinless chicken breasts (125g each)
- 5 tsp ground cumin
- 4 tsp smoked paprika
- 2 tsp dried thyme
- 2 tsp dried oregano
- 2 tsp ground black pepper
- ½ tsp cayenne pepper
- one-calorie oil spray
Instructions
- Spray each of the chicken breasts with the oil spray and put to one side.
- In a plastic food bag, mix together all of the spices.
- Add the chicken breasts and shake the bag to coat them completely.
- Place onto a baking tray and spray with a little more oil spray.
- Cook in a 200C oven for 20-30 minutes until the chicken is cooked through.
- Serve with your choice of sides,

As I said at the start, we served our cajun chicken with salad and cous cous. I make my cous cous like this:
I take 40g cous cous per person and place into a bowl that has a lid. I add a 1 tsp chilli flakes, 1 tsp dried mint and 1 chicken stock cube crumbled in. I then just cover the cous cous with boiling water and stir. I pop the lid on the bowl and leave for 10 minutes or so. Fluff up with a fork and done!
