Stuffed Spicy Butternut Squash
Home » COOK »Butternut squash is a vegetable that we use often at home, in soups, stews, and casseroles, and roasted with other vegetables as a side dish.
I love too that you can bake them whole (well, halved) as a meal in itself.
The contrast of tangy feta and the sweetness of the squash, makes this a delightful dish for vegetarians (and meat eaters too!)

This looks really delicious, definitely will be trying this out as it looks like it would be simple to make both a vegetarian and meat version at the same time.

I love the versatility of squash – it is the perfect dish for both veggies and non-veggies as they can be stuffed with all sorts of tasty fillings x
