This vegetarian burger that I adapted from a recipe book was one of the slight failures at my vegetarian barbecue recently…the consistency of them, as they were, didn’t hold up well on the grills at all!! A shame, because, what we did manage to cook and salvage tasted good!!

If I was to make these again, I’d have to cook them in the oven to bake rather than grill. I can’t see how they’d work on a barbecue!! Or, I’d just make a mashed potato side dish of them instead and serve with salad!

I used halloumi (a Greek-Cypriot cheese that you can easily buy in supermarkets these days) with chilli added. If you can’t find this, just use a little finely chopped fresh red chilli, or even dried chilli flakes.

After boiling and mashing the sweet potato, I combined it with grated halloumi, spring onions, some flour and crushed garlic. You could add salt if you wished (you can easily taste this one to season to your liking), but I find halloumi to be quite salty and for me, not required.

I then shaped the mixture into patties and allowed to chill for a few hours before putting on an oiled grill. They were incredibly hard to flip over…and in the end, I scraped what was on the grills into a bowl and turned it back into mash potatoes!!!!!!

I’m going to advise baking these in an oven, or even shallow frying. May have to experiment in the future with this or tweak the recipe to get them to be grillable.

Sweet Potato & Halloumi Burgers

Ingredients

  • 450g sweet potatoes, peeled and chopped
  • 225g halloumi with chilli (or plain halloumi and ½ fresh red chilli, chopped), grated
  • 1 garlic clove, crushed
  • 3 spring onions, finely chopped
  • 2 tbsp wholemeal flour
  • olive oil for brushing

Instructions

  1. Boil the sweet potatoes until tender. Drain and then mash.
  2. Add the halloumi, garlic, spring onions and flour to the potatoes and mix to combine.
  3. Shape into patties - I made nine from this mixture, but it will depend on their size.
  4. Chill and brush with a little olive oil before cooking.
  5. I will give suggested methods for cooking, considering my failures with grilling! Place on a hot grill for 5 minutes on each side or bake in a hot oven 200C for 10-20 minutes until browned or shallow fry for 5 minutes on each side or leave as a side dish of sweet potato and halloumi mash!
