Sweet Potato & Halloumi Burgers

Ingredients

  • 450 g sweet potatoes peeled and chopped
  • 225 g halloumi with chilli or plain halloumi and ½ fresh red chilli, chopped, grated
  • 1 garlic clove crushed
  • 3 spring onions finely chopped
  • 2 tbsp wholemeal flour
  • olive oil for brushing

Instructions

  • Boil the sweet potatoes until tender. Drain and then mash.
  • Add the halloumi, garlic, spring onions and flour to the potatoes and mix to combine.
  • Shape into patties - I made nine from this mixture, but it will depend on their size.
  • Chill and brush with a little olive oil before cooking.
  • I will give suggested methods for cooking, considering my failures with grilling! Place on a hot grill for 5 minutes on each side or bake in a hot oven 200C for 10-20 minutes until browned or shallow fry for 5 minutes on each side or leave as a side dish of sweet potato and halloumi mash!
