Christmas in July continues today with one of the starters that I put together – a seafood platter. For me, Christmas dinner isn’t Christmas dinner without prawn cocktail for starter! But to switch things up a bit in 2012, I bought some yummy seafood and put it all on a platter for us to share.
I covered one of my Jamie Oliver platters with shredded lettuce and then began the placement of seafood! Lobster tails (it was Christmas after all!) prawns, smoked salmon, shredded crab sticks, poached salmon and a salmon mousse all adorned the plate – a fish lovers delight! I finished it up with wedges of lemon and served some crusty bread on the side. Or why not throw those lobster tails on the grill?
