Pistachio Granola Bars
Ingredients
- 2¼ cups rolled oats
- ¾ cup shelled pistachios roughly chopped
- ½ cup unsweetened shredded coconut desiccated coconut
- ¼ cup sesame seeds
- 1 cup dried cranberries
- ¼ teaspoon salt
- 5 tablespoons coconut oil melted
- ¼ cup honey or agave syrup
- 2 teaspoons pure vanilla extract

- Half-Sheet Pan (approximately 18 x 13 inches/46 x 33 cm)
- Parchment Paper (baking/greasproof paper)
Instructions
- Preheat the oven to 350°F/180°C/Gas 4. Line a half-sheet baking pan with parchment paper.
- Place the rolled oats, pistachios, coconut, sesame seeds, dried cranberries, and salt in a large mixing bowl. Stir to combine.

- Add the melted coconut oil, honey or agave syrup, and vanilla extract. Mix thoroughly until all the ingredients are evenly coated.

- Transfer the granola mixture to the prepared baking pan. Press it firmly and evenly into the pan and smooth the top.

- Bake for 18-20 minutes, until lightly golden brown.
- Remove from the oven and place the pan on a wire cooling rack. Allow the granola to cool completely in the pan before slicing into bars.

- Cut into 18-20 bars. Serve and enjoy!
