Red, White & Blue Cake Pops

I made some Red, White & Blue Cake Pops for my Diamond Jubilee Big Lunch Party. By the time I was making these I forgot to take photographs of each stage, so this post is a bit photo-less I’m afraid :(

If you’ve never heard of or seen cake pops before, head on over to the queen of cake pops – Bakerella for a cake pop feast for the eyes. The ones I mad for our party were simple to make, just round balls of cake and frosting, dipped in candy melts and sprinkled with red, white and blue sprinkles.

You will need ready-made cake (store bought, or your own…I bought a cake slab from the supermarket) and a can of frosting. Again, ready made, or if you have your own knocking about use that.

To make the cake balls for the cake pops, you need to crumble up the cake into crumbs and then stir some frosting. I can’t say how much exactly as it just depends on the consistency as you work it through. I used nearly 300g cake and about half a (450g) tub of frosting give or take. You want to be able to mould the cake into balls by rolling a spoonful of mixture in between the palms of your hands. This part is sticky and messy!

You don’t want the cake balls to be too big, as they end up being a bit top heavy (which, on this occasion, mine were). I’d say aim for about an inch across maybe?

Once you’ve got all your cake balls rolled out, lay on a greaseproof pan (or on a tray with greaseproof paper) and pop into the fridge for a few hours to chill and firm up – or do as I do, and put in the freezer for 15 minutes.

To coat the cake pops, melt some candy melts according the instructions on the package, and then dip a lollipop stick about half an inch into it. You do this so that when you put the cake pop on the stick they’ll have a bit of added strength by ‘glueing’ together. You then put the stick into the cake ball, wait a moment and then dip into the melted candy. Give a gentle but firm tap to knock off any excess and then sprinkle on some sprinkles (or dip them into sprinkles!) Poke some holes into an up-turned egg box, or a cardboard box, or polystyrene and then insert the sticks of cake to hold them in place whilst they dry.

The candy melts harden pretty quickly, so all’s left is to serve and enjoy their sweet goodness!
