Almond and Cranberry Energy Bites Recipe

You may recall, back in July, I announced that I was going on a detox in September. That didn’t happen as I soon realised that I needed to get my weight back down sooner rather than later and I went straight back to my weight management plan (and am now 13lbs down already!), but I did get sent a selection of superfood powders from Indigo Herbs to use, and I have made a batch of Almond and Cranberry Energy Bites. I shouldn’t be eating them on my particular diet plan, but, I can’t prepare food and not have a little nibble, and I can confirm that they are a really tasty, superfood treat!

Not only do they taste good, they are also really simple to make – you don’t even need to cook them!

Mix together porridge oats, flaked almonds, dried cranberries, organic raw banana powder, hazelnut butter and honey to form a dough. Chill and roll into bite sized balls.

You can buy hazelnut butter in healthfood shops, but if you can’t find it, you can always use peanut butter instead. However, the hazelnut butter gives a distinct taste of a famous chocolate spread… just sayin’!

Almond & Cranberry Energy Bites

Ingredients

Makes 20 – 25 Almond & Cranberry Energy Bites
Calories per energy bite: 70 (approx – worked out with online calorie counter)

  • 100g (1 cup) porridge oats
  • 30g (¼ cup) flaked almonds
  • 40g (¼ cup) dried cranberries
  • 1 tsp organic raw banana powder
  • 6 tbsps hazelnut butter
  • 2 tbsps runny honey

Method

  1. Mix together all of the ingredients in a bowl to form a dough.
  2. Place into the fridge to chill for half and hour.
  3. Form into bite sized balls; this batch will make around 20 – 25 depending on the size of the balls you make.
  4. Keeps for about a week in an airtight container in the fridge – but they probably won’t last that long!

Once you’ve got the basic recipe down – which is the nut butter, organic raw banana powder, oats and honey; you can then tweak to your hearts content using different dried fruits and nuts. You could even add in a few dark chocolate drops, because dark chocolate is actually very good for you ;) Indigo Herbs also sent me Bilberry Powder and Acai Powder which I used in another recipe for a homemade muesli & porridge mix; those would work well in alternative combinations too – just experiment!
