I love cake pops, they're so cute! But I find them quite frustrating to make! I can never get them looking as nice as I plan to in my head and so, instead, resort to marshmallow pops. They are super easy to make, super tasty and these Pink Encrusted Marshmallow Pops went down well at the Pink Flavoured Baby Shower that I hosted recently.
To make them, you will need a bag of marshmallows, candy melts (or white chocolate), sprinkles of your choice - I used sugar crystal sprinkles, and lollipop sticks. I also decorated each stick with a ribbon tied into a bow.
Melt the candy melts or chocolate in a microwave, according to package instructions - I tend to do 30 second bursts. Then, skewer a marshmallow with a lollipop stick and dunk it into the melted candy. Tap off any excess.
Having poured your sprinkles onto a plate, place the candy covered marshmallow onto the pile and roll around, covering all the melted candy.
Leave to dry on baking paper (doesn't take long!) and then present however you wish. I made mine this way so that they could stand up marshmallow side. You could also cover a box and poke in holes to stand them up the other way.
Very cute, and the sprinkles give a nice crunch to the soft marshmallow!
