Today I’ve made Candy Corn Rice Krispie Treats!

I’ve never made rice krispie treats before, but they are so easy to make it is ridiculous! Since I’ve been to the USA this year, I was able to buy candy corn (have never seen it in the UK) and pumpkin spiced marshmallows (ditto), however, you can easily replicate the flavour of the marshmallows by using plain ones and adding a pinch of pumpkin pie spices – cinnamon, nutmeg, cloves and ginger to the mix. A candy corn replacement? You could use yellow and orange Smarties or M&Ms.

The ingredients – pumpkin spice marshmallows, Rice Krispies, butter and candy corn.

Line a dish (mine was approx 6″ x 10″) with foil and grease with an oil spray.

Add broken candy corn pieces to the Rice Krispies – there are always broken pieces in a bag!

Melt the butter and marshmallows in the microwave and stir. Don’t touch though – it’s very hot!

Pour the gooey melted marshmallow into the candy corn and Rice Krispies. Stir everything together until evenly coated.

Tip the mixture into the dish and press down well using the back of a spoon. Wetting the spoon first really helps as the mixture doesnt stick to it. Press 12 candy corn pieces evenly across for decoration.

Place the dish in the fridge to set for a few hours.

When set, use a wet knife to cut into 12 pieces.

Candy Corn Rice Krispie Treats! Enjoy!

These have gone down really well with my lot! A subtle pumpkin spice flavour from the marshmallows and the candy corn pieces add a caramel flavour too – so lots of depth to a simple Rice Krispie treat! They’re gooey, sticky and still crunchy – perfect treat for a Halloween party!

As I said at the start of this post, I’ve never made Rice Krispie treats before, but knowing how easy they are to make, I’ll be experimenting in the future with other mixtures!

Candy Corn Rice Krispie Treats

Serves: 12
Ingredients
  • 110g (4oz) pumpkin spice marshmallows
  • 28g (1oz) butter
  • 2½ cups Rice Krispies
  • handful candy corn, broken
  • 12 whole candy corn for decoration
  • oil spray
Instructions
  1. Line a dish (approx 6″ x 10″) with foil, leaving enough around the edges to lift out when the treats are set. Grease with oil spray.
  2. In a bowl, mix together the Rice Krispies and broken candy corn pieces.
  3. In a microwave proof bowl, melt the butter for 30 seconds.
  4. Add the marshmallows and stir to coat in the butter then microwave for 30 seconds.
  5. Stir the mixture and return to the microwave for another 30-60 seconds until melted.
  6. Pour the melted marshmallow and butter into the Rice Krispie and candy corn and stir until combined and evenly coated.
  7. Tip the mixture into the lined and greased dish and press down firmly with the back of a wet spoon.
  8. Press the 12 whole candy corn pieces evenly across the top (4 by 3) so that each cut treat will have a piece of candy corn on it.
  9. Place in the fridge to set for a few hours and when ready to serve, use a wet knife to cut into twelve pieces.
