Ingredients

  • 1 English cucumber
  • 1 cup Greek yogurt
  • ½ cup sour cream
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp extra-virgin olive oil
  • 2 medium garlic cloves finely minced
  • 1 Tbsp fresh mint or dill finely chopped (or a combination of both), plus extra for garnish
  • Sea salt and black pepper to taste
  • Fresh pita for serving

Instructions

  • Grate the cucumber onto a clean kitchen towel, a cheesecloth, or a few layers of paper towels. Ball up and squeeze as much water out of the cucumbers as you can.
  • Place the cucumber into a medium bowl with the yogurt, sour cream, lemon juice, olive oil, garlic, and herbs. Stir to combine and season to taste with sea salt and black pepper.
  • Cover the bowl and place it in the refrigerator for one hour to chill and for the flavors to blend.
  • Transfer the tzatziki to a serving bowl, drizzle with some olive oil and chopped herbs. Serve with toasted pita bread and enjoy!

Notes

  • After grating, be sure to remove as much liquid as possible from the cucumber.
  • This dip will stay in the refrigerator for up to two days. Stir well before serving.
  • This is a Greek-style dip. If desired, you can leave out the sour cream and increase the Greek yogurt.
