Ingredients
For the Dressing
¼cupextra-virgin olive oil
2Tbsprice wine vinegar
1tspDijon mustard
½tspItalian seasoning
Sea salt and black pepperto taste
For the Salad
2cupsbaby spinachrinsed and patted dry
2cupsbaby arugularocket, rinsed and patted dry
1medium fennel bulbtrimmed and thinly sliced
1cupstrawberriessliced
4oz100g Feta cheese, crumbled
Sprigs of fresh basilfor garnish, optional
Instructions
Prepare the dressing by whisking together all ingredients in a glass or other non-reactive bowl. Taste and adjust seasonings, as desired. Transfer to a serving container and set aside.
Arrange the spinach and arugula on a serving platter and top with sliced fennel, strawberries, and Feta cheese.
Serve immediately with chilled salad plates and dressing on the side. Enjoy!
