Shrimp Slaw Sandwich with Garlic Lemon Aioli

Ingredients

  • 1 large loaf bread cut in half lengthways
  • 1 ½ cups mayonnaise
  • ½ tbsp lemon juice
  • ¼ tsp salt
  • 1 Tbsp Dijon mustard
  • 1 tsp garlic powder
  • 2 ½ cups slaw mix
  • 2 lb/1kg shrimp cooked

Instructions

  • To make the aioli, mix together the mayonnaise, lemon juice, salt, Dijon mustard, and garlic powder until combined.
  • Spread some of the aioli onto the bread, and pour the rest over the slaw mixture. Toss together to coat.
  • Layer the slaw onto onto one half of the bread, and pile on the cooked shrimp. Add the other half of the bread and cut into slices.
  • Serve and enjoy!
