Sift the flour into a bowl and make a well in the centre.
Crack the eggs into the well and start to whisk the eggs into the flour.
Gradually add the milk, whisking all the time to combat any lumps.
Make a test pancake first to judge how much you need. Heat a frying pan until hot and add a drop of oil (I use spray oil) then add the pancake batter.
Swirl around the pan and after about 30 seconds you should see that you can lift the edges of the pancake. Flip over with a spatula and cook on the other side for about 30 seconds. Slide onto a warm plate and continue with the rest of your pancakes.
