Perfect Pancakes

Ingredients

  • 110 g plain flour
  • 2 eggs
  • 275 ml milk
  • oil for frying

Instructions

  • Sift the flour into a bowl and make a well in the centre.
  • Crack the eggs into the well and start to whisk the eggs into the flour.
  • Gradually add the milk, whisking all the time to combat any lumps.
  • Make a test pancake first to judge how much you need. Heat a frying pan until hot and add a drop of oil (I use spray oil) then add the pancake batter.
  • Swirl around the pan and after about 30 seconds you should see that you can lift the edges of the pancake. Flip over with a spatula and cook on the other side for about 30 seconds. Slide onto a warm plate and continue with the rest of your pancakes.
