Preheat an indoor grill pan* to medium-high heat, then lightly brush the pan with olive oil.
Combine Herbes de Provence, mustard, olive oil, wine, garlic, and salt in a small bowl and mix well.
Brush the herb mixture evenly over all sides of lamb.
Place the lamb chops in preheated pan and grill for 4 minutes on each side, cooking to the desired degree of doneness.
Serve with a fresh garden salad and hot crusty bread. Enjoy!
