Grilled Lamb Loin Chops with Herbs de Provence Crust

Ingredients

  • 1 Tbsp dried Herbes de Provence
  • 2 Tbsp Dijon mustard
  • 1 Tbsp olive oil
  • 1 Tbsp Dry White Wine such as chardonnay
  • ½ tsp kosher salt
  • ¼ tsp freshly ground black pepper
  • 1 garlic clove minced
  • 8 1 "/2.5cm thick lamb loin chops trimmed
  • Cooking spray or olive oil for pan

Instructions

  • Preheat an indoor grill pan* to medium-high heat, then lightly brush the pan with olive oil.
  • Combine Herbes de Provence, mustard, olive oil, wine, garlic, and salt in a small bowl and mix well.

  • Brush the herb mixture evenly over all sides of lamb.

  • Place the lamb chops in preheated pan and grill for 4 minutes on each side, cooking to the desired degree of doneness.

Notes

  • *This recipe may also be prepared on an outdoor grill, in a cast-iron skillet, or cooked under the broiler/grill. Cooking times will vary depending on the preparation method.
