Equipment

Ingredients

  • 4 lbs 1.8kg pork tenderloin
  • ¾ cup olive Oil
  • 1 Tbsp orange zest
  • ¾ cup pulp-free Orange Juice
  • ½ cup fresh squeezed Lime Juice
  • 1 cup cilantro chopped
  • ¼ cup chopped mint leaves
  • 3 Tbsp minced garlic cloves
  • 2 tsp dried oregano
  • 2 tsp ground cumin
  • ¼ tsp kosher salt sea salt flakes
  • ¼ tsp ground black pepper

Instructions

  • Using a large bowl, combine all ingredients and mix until combined.


  • Place the pork loin into a deep dish
  • Pour the sauce over the pork and cover with foil


  • Place into the fridge to allow the pork to marinate overnight.
  • The next day: Preheat oven to 220°C/425°F/Gas 7 and place a wire rack over a roasting pan.
  • Place the pork on the wire rack in the pan and roast for 30 minutes in the oven before reducing the temperature to 190°C/375°F/Gas 5.
  • Continue to roast the pork for 1 hour and 30 minutes or until the meat is cooked through and tender.
  • Transfer the pork to a cutting board and cover with foil. Leave it to rest for 20 minutes before carving.
