Cinnamon Snowball Cookies
The Cinnamon Snowball Cookies are both gluten-free and dairy-free. Makes approximately 20, but will depend on how big you make them!

- 2 egg whites
- 115 g/4oz/½ cup caster sugar superfine sugar
- 225 g/8oz/1 cup ground almonds
- 1 level tablespoon ground cinnamon
- icing sugar powdered sugar for dusting
Preheat oven to 160C/320F/Gas 3
Whisk the egg whites until stiff.
Fold in the ground almonds, sugar and cinnamon.
Form into a dough.
Shape into balls, around 1" diameter.
Place on a baking sheet covered with baking parchment.
Cook for 15-20 minutes.
Allow to cool slightly before dusting with icing sugar.
