Cinnamon Snowball Cookies

The Cinnamon Snowball Cookies are both gluten-free and dairy-free. Makes approximately 20, but will depend on how big you make them!

Ingredients

  • 2 egg whites
  • 115 g/4oz/½ cup caster sugar superfine sugar
  • 225 g/8oz/1 cup ground almonds
  • 1 level tablespoon ground cinnamon
  • icing sugar powdered sugar for dusting

Instructions

  • Preheat oven to 160C/320F/Gas 3
  • Whisk the egg whites until stiff.
  • Fold in the ground almonds, sugar and cinnamon.
  • Form into a dough.
  • Shape into balls, around 1" diameter.
  • Place on a baking sheet covered with baking parchment.
  • Cook for 15-20 minutes.
  • Allow to cool slightly before dusting with icing sugar.
