Ingredients

  • 2 large ripe avocados
  • 1 15-oz/400g can chickpeas, rinsed and drained
  • Juice of 1 medium lemon
  • ½ tsp garlic powder
  • Sea salt and black pepper to taste
  • ¼ cup parsley chopped (+ more for garnish, if desired)
  • 6 large slices whole-grain bread toasted
  • ½ cup Greek yogurt or coconut yogurt for vegan

Instructions

  • Slice avocados in half and remove seeds. Scoop the flesh into a medium mixing bowl. Add chickpeas to the bowl and mash with a fork. Ingredients should be mostly mashed leaving a few nice chunks for texture.

  • Pour the lemon juice over the avocado chickpea mixture. Add the garlic powder. Season with salt and pepper to taste and stir in the parsley.
  • Divide the avocado chickpea mixture between the 6 toasted bread slices and top with a dollop of Greek yogurt and some extra parsley. Enjoy!
