¼cupparsleychopped (+ more for garnish, if desired)
6large slices whole-grain breadtoasted
½cupGreek yogurtor coconut yogurt for vegan
Instructions
Slice avocados in half and remove seeds. Scoop the flesh into a medium mixing bowl. Add chickpeas to the bowl and mash with a fork. Ingredients should be mostly mashed leaving a few nice chunks for texture.
Pour the lemon juice over the avocado chickpea mixture. Add the garlic powder. Season with salt and pepper to taste and stir in the parsley.
Divide the avocado chickpea mixture between the 6 toasted bread slices and top with a dollop of Greek yogurt and some extra parsley. Enjoy!
