14-oz/100g chicken breast, grilled and thinly sliced
1medium avocadopeeled and thinly sliced
1tomatothinly sliced
1cupfresh baby spinach
1cupmozzarellashredded
2tspolive oil
Instructions
Heat your panini press according to the manufacturer's instructions while you prepare the sandwich.
Spread one teaspoon of Dijon mustard onto each slice of bread.
Top 2 slices of bread with one-half each of the chicken, avocado, tomato, baby chicken, and shredded mozzarella. Add the remaining bread on top to form the sandwich.
Brush both sides of the paninis with olive oil and grill in the press for 6-8 minutes (or according to the manufacturer's instructions) until the bread is golden brown on all sides and the cheese is melted.
Remove sandwiches from the press and cut them in half. Serve with fries and/or a choice of side dishes and enjoy!
