Chicken Avocado Panini

Grilled to perfection, this Chicken Avocado Panini combines tender chicken, creamy avocado, and melted mozzarella.

Ingredients

  • 4 slices white or sourdough bread
  • 4 tsp Dijon mustard
  • 1 4-oz/100g chicken breast, grilled and thinly sliced
  • 1 medium avocado peeled and thinly sliced
  • 1 tomato thinly sliced
  • 1 cup fresh baby spinach
  • 1 cup mozzarella shredded
  • 2 tsp olive oil

Instructions

  • Heat your panini press according to the manufacturer's instructions while you prepare the sandwich.
  • Spread one teaspoon of Dijon mustard onto each slice of bread.
  • Top 2 slices of bread with one-half each of the chicken, avocado, tomato, baby chicken, and shredded mozzarella. Add the remaining bread on top to form the sandwich.
  • Brush both sides of the paninis with olive oil and grill in the press for 6-8 minutes (or according to the manufacturer's instructions) until the bread is golden brown on all sides and the cheese is melted.
  • Remove sandwiches from the press and cut them in half. Serve with fries and/or a choice of side dishes and enjoy!
