Preheat oven to 180°C/350°F/Gas 4. Line two cookie sheets with parchment paper or a nonstick baking mat and set them aside.
Using an electric handheld or standing mixer, beat the butter, brown sugar, sugar, eggs, and vanilla until combined and fluffy.
Sift or whisk the cake flour, flour, baking soda, and salt into a medium bowl.
Gradually mix the dry ingredients into the wet ingredients until a dough forms.
Fold in 2 cups of the chocolate chips and 2 cups of the slightly crushed Cadbury Mini Eggs.
Using a medium ice cream scoop, scoop dough into your hands and roll it into a ball.
Place the dough onto the cookie sheet, about 2-inches apart.
Press the remaining chocolate chips and Mini Eggs into the top of the cookies.
Bake in the oven for 15-18 minutes or until lightly golden brown.
