Brie Crostini with Orange-Cranberry Relish

Ingredients

For the Crostini

  • 1 long thin baguette, cut into ⅓”/1cm slices
  • 3 Tbsp unsalted butter melted
  • 8 oz 225g Brie cheese, rind removed and cut into thin slices

For the Relish

  • 12 oz 340g bag fresh cranberries
  • ½ cup white sugar
  • 2 Tbsp real maple syrup
  • ¾ cup fresh orange juice
  • 2 tsp fresh ginger finely minced
  • 1 tsp ground cinnamon
  • Tbsp orange zest

Instructions

  • Preheat oven to 180°C/350°F/Gas 4 and line a large, rimmed baking sheet with parchment paper or a nonstick baking sheet. Arrange the baguette slices on the prepared baking sheet and brush with the melted butter.
  • Place the baking sheet in preheated oven and bake for 7-9 minutes until golden brown. Remove from the oven and place a small slice of Brie on each crostino while it is still warm.
  • While the bread is toasting, combine the cranberries, sugar, maple syrup, orange juice, ginger, cinnamon, and orange zest in a large saucepan. Cook over medium heat, stirring frequently, for 10-12 minutes or until the cranberries “pop.”
  • Remove from heat and cool for several minutes. Spoon some of the warm cranberry relish over each crostino and serve immediately. Enjoy!
