Ingredients

  • 2 medium zucchini halved and sliced into matchsticks, excess seeds removed
  • 2 large eggs beaten
  • Sea salt and black pepper to taste
  • ½ cup panko breadcrumbs
  • ½ cup parmesan cheese finely shredded
  • Cooking spray

For the Dipping Sauce

  • 1 cup Greek yogurt
  • 1 Tbsp fresh lemon juice
  • ½ cup fresh parsley chopped
  • ½ cup fresh dill chopped
  • Sea salt and black pepper to taste

Instructions

  • Preheat oven to 400°F/200°C/Gas 6. Line a large, rimmed baking sheet with parchment paper and set it aside.
  • Whisk the eggs together with salt and pepper to taste in a shallow dish. In a second shallow dish, mix together the panko breadcrumbs and parmesan cheese.
  • Dip each piece of zucchini into the beaten egg mixture, allowing the excess egg to drain off each piece. Transfer the zucchini to the seasoned breadcrumbs and turn to evenly coat.
  • Arrange the zucchini fries onto the prepared baking sheet in a single uniform layer, and season with additional salt and pepper if desired. Lightly spray them with cooking spray.
  • Place the zucchini fries in the oven to bake for 25-30 minutes, or until crispy and golden, flipping halfway through.
  • Place the Greek yogurt, lemon juice, parsley, and dill in a medium bowl. Season with salt and pepper to taste and stir to combine.
  • Transfer the baked zucchini fries to a serving platter alongside the bowl of dipping sauce. Enjoy!
