For the cupcakes
- 335 g/12oz unsalted butter softened
- 335 g/12oz caster sugar
- 335 g/12oz self-raising flour
- 1½ tsp baking powder
- 6 large eggs room temperature
- 1½ tsp vanilla extract
Preheat oven to 175C/350F/Gas 4.
Place 24 cupcake liners into cupcake pans.
Put all of the ingredients into a mixing bowl and beat with an electric whisk for 3 minutes until smooth, pale and fluffy.
Use an ice cream scoop to divide the batter between the cupcake liners.
Bake for 20 minutes until golden and risen or until an inserted toothpick comes out clean.
Leave to cool in the pan for a few minutes and then transfer to a wire rack to cool completely before decorating.
Add 3 Tbsps of cocoa powder to the cake batter to make chocolate cupcakes.

- 1½ cups caster sugar
