Ingredients

For the sauce

  • 400 g tinned chopped tomatoes
  • 1 onion diced
  • 4 garlic cloves crushed
  • 170 g tomato paste
  • 230 ml beef stock
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 2 tbsp smoked paprika
  • 1 tsp sea salt
  • 1 tsps cayenne pepper
  • 220 g tinned pineapple diced

For the spice rub

  • 4 tbsp smoked paprika
  • 2 tbsp sea salt
  • 2 tbsp chilli powder
  • 2 tbsp ground cumin
  • 1 tbsp ground black pepper
  • 1 tbsps dried oregano
  • 1 tbsps ground white pepper
  • 2 tsp cayenne pepper

For the pulled pork

  • 3.5 kg pork shoulder
  • 2 white onions thinly sliced

Instructions

  • Place all the sauce ingredients into a food processor or blender and whiz until smooth (ish)
  • Remove and discard the thick layer of fat from the pork.
  • Mix the spice rub ingredients together (except the meat!) in a bowl, and rub all over the pork.
  • Place the pork in a dish and pour over the sauce. Leave to marinade for at least 3 hours (or overnight if you can.)
  • Place the sliced onions into the bottom of the slow cooker. Add the marinated pork and all of the sauce. Cook on low for at least 12 hours (we cooked ours for about 18 hours!)
