Ingredients

  • 6 frozen Slimming World Syn-free Sausages
  • Low-calorie cooking spray
  • 1 onion chopped
  • 1 large carrot peeled and roughly chopped
  • 2 garlic cloves crushed
  • 1 L hot chicken stock
  • 150 g dried macaroni or other small pasta shapes
  • 400 g passata with herbs
  • 1 400g can kidney beans, drained and rinsed
  • 100 g savoy cabbage shredded
  • Salt and freshly ground black pepper
  • Fresh basil to serve, optional

Instructions

  • Cook the sausages according to the pack instructions.
  • Meanwhile, spray a large cooking pot with cooking spray and fry the onions, carrots, and garlic for about 5 minutes.
  • Add the stock and pasta and bring to the boil. Reduce heat to simmer for 15 minutes or until the pasta and vegetables are tender.
  • Slice the sausage in 6 pieces and stir into the soup with the passata, beans, and cabbage. Simmer for 5 minutes or until the cabbage has wilted.
  • Season with salt and pepper to taste.
  • Serve piping hot with fresh basil if using.

Notes

  • If you can't find passata with herbs just use regular passata and add 1-2 teaspoons of dried mixed herbs instead.
  • If you can't find passata, whizz up a can of tomatoes and use that with dried mixed herbs.
