Sausage & Bean Bake with Potato Topping

Slimming World friendly recipe is a hearty and filling dish with sausages and butter beans cooked in a tomato sauce and topped with crispy potatoes.

Ingredients

  • 800 g potatoes cut into small cubes
  • Low-calorie cooking spray
  • 200 g back bacon rashers visible fat rmoved, roughly chopped
  • 12 frozen Slimming World Syn-free Pork Sausages defrosted and halved
  • 1 large white onion finely chopped
  • 1 carrot peeled and finely chopped
  • 1 400g can butter beans, drained and rinsed
  • 1 400g can chopped tomatoes
  • 100 ml hot chicken stock broth
  • 5 Tbsp tomato purée tomato paste
  • Salt & freshly ground black pepper

Instructions

  • Preheat oven to 200C/400F/Gas 6.
  • Boil potatoes for 6-8 minutes until slightly soft. Drain well and set aside.
  • Meanwhile, spray a large saucepan or flameproof casserole dish with cooking spray and place over medium-high heat.
  • Add the bacon and sausages and cook for 5 minutes until lightly browned.
  • Add the onion and carrot and cook gently for 5 minutes until the vegetables start to soften.
  • Add the butter beans, tomatoes and stock to the casserole dish and bring to the boil.
  • Add the tomato purée and stir well. Simmer for 5 minutes.
  • Season well with salt and pepper to taste.
  • Pile the potatoes on top and spray with cooking spray. If you cooked the filling in a saucepan, transfer to a casserole dish before topping with potatoes.
  • Bake for 35-40 minutes or until the potatoes are crisp and golden.
