Heat the milk in a small saucepan over medium heat until it steams. DO NOT let it boil!
Add the white chocolate chips to the warmed milk and stir until they are melted.
Stir in the sugar until it dissolves.
Add 2-3 drops of red food coloring to the pan and stir to distribute the color. Add additional drops for a deeper shade.
Pour the red velvet hot chocolate into two mugs.
Top each mug with whipped cream and sprinkles. Enjoy!
