Raspberry Lime Vodka Cocktail

Ingredients

For the Raspberry Simple Syrup

  • ¾ Cup. Raspberries
  • 1 Cup. Water
  • ¾ Cup. White Sugar

For the Cocktail

  • 1 ½ oz. Vodka
  • 2 Tbsp. Fresh lime juice
  • Cup. Raspberry simple syrup
  • ¾ Cup. Water
  • Lime slices and raspberries to garnish optional

Instructions

  • Make the raspberry simple ¾syrup by placing the water, sugar, and raspberries in a small pot over medium heat. When it comes to a boil, turn heat to low and simmer for 10 mins. Strain through a sieve over a bowl, pushing through to extract all the flavor. Set aside to cool completely.
  • To make the cocktail, place water, raspberry simple syrup, lime juice, and vodka in a shaker filled with ice.
  • Shake vigorously to combine.
  • Strain over a large glass filled ice.
  • Garnish with lime slices and raspberries (optional).
  • You can use sparkling water, club soda, seltzer, or even tonic water in place of still water - just remember to stir NOT shake!

To make a big batch use:
  • 1 part vodka
  • ¾ part lime juice
  • 2 parts raspberry simple syrup
  • still or sparkling water, club soda, or seltzer to top up
As long as you use the same size measure for 1 part, the ratios will be correct.
