Mardi Gras Monkey Bread

Ingredients

  • 2 16-oz cans of cinnamon rolls*
  • 1 cup brown sugar packed
  • 1 Tbsp ground cinnamon
  • cups pecans chopped
  • ¼ tsp salt
  • ½ cup butter melted
  • 2 tsp vanilla extract

For the Glaze

  • 3 cups powdered sugar icing sugar
  • ½ tsp pure vanilla extract
  • 2-3 Tbsps milk
  • Yellow green, and purple sprinkles

Instructions

  • Preheat your oven to 180C/350F/Gas 4. Spray the inside of a bundt pan
    with non-stick baking spray and set aside.
  • Remove the cinnamon rolls from their tubes and cut each one in
    half and then in half again so you have four pieces per roll.
  • Place the brown sugar, chopped pecans, and salt into a bowl and stir to combine.

  • In another bowl stir together the melted butter and vanilla.
  • Take a piece of cinnamon roll and dip it into the melted butter and then roll in the sugar mixture. Place into the bottom of the bundt pan.
  • Repeat with each piece of cinnamon roll and layer into the pan until all pieces have been used.
  • Place the pan on a baking sheet and bake in the center of the oven for 40-45 minutes.
  • Remove from the oven and leave to cool for 15 minutes before turning it out onto a cake plate or cake stand. The monkey bread should slide right out. Leave to cool completely.

  • To make the glaze, place the powdered sugar and vanilla in a bowl, whisk in the milk to the desired consistency.
  • Drizzle over cooled monkey bread and add the green, yellow, and purple sprinkles on top.

Notes

*You will need two (16oz) cans or the equivalent. 16oz is around 450g, so if you are in the UK and buy Jus-Rol Cinnamon Swirls Dough, you are going to need just over 3 packs. You may as well use them all up - so you'll just have a slightly denser Monkey Bread! You may need to adjust the cooking time accordingly.
