Korean-Style Beef Noodles

Ingredients

  • 6 large garlic cloves
  • 40 g ginger peel and roughly chopped
  • 1 red chilli deseeded
  • Low-calorie cooking spray
  • Beef stock cube
  • 2 heaped tsp tomato puree tomato paste
  • ½ tsp Marmite
  • 300 ml boiling water
  • Tbsp rice vinegar
  • 4 Tbsp dark soy sauce
  • 250 g dried soba noodles or medium egg noodles
  • 400 g lean sirloin steak visible fat removed and cut into thin strips
  • 600 g mixed stir-fry vegetables

Instructions

  • Place the garlic, ginger and chilli in a food processor and blend until fairly smooth.
  • Spray a non-stick saucepan with low-calorie cooking spray and place on medium heat.
  • Add the garlic paste and fry for 30 seconds. Add stock cube, tomato puree, Marmite and boiling water. Simmer for 10 minutes.
  • Add the vinegar and soy sauce and bring to the boil. Remove from heat and set aside.
  • Meanwhile, cook the noodles according to the package instructions and drain well.
  • Spray a wok or large frying pan and low calorie spray and place on high heat.
  • Add beef strips and stir fry for 3-5 minutes. Transfer to plate and keep warm.
  • Add the vegetables and a splash of water to wok and stir-fry for 3-4 minutes.
  • Return the beef to wok, add the noodles and sauce and simmer to heat through.
  • Serve hot and enjoy!
