Ingredients

dried soba noodles or medium egg noodles

lean sirloin steak
visible fat removed and cut into thin strips

mixed stir-fry vegetables
Instructions
Place the garlic, ginger and chilli in a food processor and blend until fairly smooth.
Spray a non-stick saucepan with low-calorie cooking spray and place on medium heat.
Add the garlic paste and fry for 30 seconds. Add stock cube, tomato puree, Marmite and boiling water. Simmer for 10 minutes.
Add the vinegar and soy sauce and bring to the boil. Remove from heat and set aside.
Meanwhile, cook the noodles according to the package instructions and drain well.
Spray a wok or large frying pan and low calorie spray and place on high heat.
Add beef strips and stir fry for 3-5 minutes. Transfer to plate and keep warm.
Add the vegetables and a splash of water to wok and stir-fry for 3-4 minutes.
Return the beef to wok, add the noodles and sauce and simmer to heat through.
Serve hot and enjoy!
