Ingredients

For the Rice Krispies Treats Base

  • 3 Tbsp unsalted butter
  • 4 cups miniature marshmallows
  • 6 cups Rice Krispies cereal

For the Royal Icing Decoration

Special Equipment

  • 9 " x 13" baking pan
  • Mickey House head cookie cutter
  • Piping bag with number 2 tip
  • Squeeze bottle

Instructions

  • To make the Mickey Mouse shaped Rice Krispies treats, line a 9 x 13pan with aluminum foil and grease well with cooking spray. Leave some foil overhanging the edges of the pan so you can lift out the Rice Krispies easily. Set aside.
  • Melt the butter in a large saucepan on low heat, slowly adding the marshmallows. Stir until the marshmallows have completely melted.
  • Add the Rice Krispies and stir until all of the cereal is coated and combined.
  • Transfer the mixture to the prepared pan and press down into an even layer using a sheet of wax paper. (The mixture is VERY sticky!)
  • Place in the fridge for about an hour or two to cool and set.
  • Carefully life the sheet of Rice Krispies from the pan using the edges of the foil and use a Mickey Mouse head shaped cookie cutter to cut several out. How many you get will depend on the size of your cookie cutter. Spray the cutter with cooking spray or dip it in water, to prevent the mixture from sticking. Set aside.
  • To make the royal icing, place the egg whites, cream of tartar, powdered sugar, and almond extract into a stand mixer and whisk until well combined, smooth and has stiff peaks - about 7 minutes.
  • Scoop half a cup of the icing into a bowl and stir in a few drops of black gel food coloring until you get a good black coloring. Place this icing into a piping bag fitted with a no. 2 piping tip.
  • Scoop about a quarter of a cup of white icing into a second piping bag fitted with a no. 2 piping tip. If you only have one piping tip, do the white icing first. Cover the black icing with a damp paper towel to prevent it from drying out.
  • Stir 2 tablespoons of water into the remaining white icing to get a runnier consistency and pour this into a squeeze bottle.
  • To decorate, pipe a white outline around the edges of Mickey's head and leave for a few minutes to dry.
  • Using the squeeze bottle of icing, fill inside the piped edge and gently spread out to the edges with a pallet knife/spatula. Leave to dry for up to 24 hours.
  • Use the black icing to pip on Jack Skellington's features - use the photos as a reference.
  • Spray the edges with the black edible spray and leave everything to dry before serving.

Notes

Royal icing can dry out very quickly. Make sure you keep it covered at all times with a damp paper towel, including the tips of any piping nozzles.
