Hawaiian Baked Beans

These Hawaiian Baked Beans are a delicious hot and smoky side dish that is so easy to make using canned pinto beans.

Ingredients

  • 1-2 Tbsp vegetable oil
  • ½ lb/225 g cubed bacon lardons
  • 1 cup chopped red onion
  • ½ cup chopped red bell peppers
  • ½ cup chopped green bell pepper
  • 3 16 oz/400g cans pinto beans, drained
  • ¼ cup pineapple juice from the drained pineapple
  • ¼ cup lava bbq sauce
  • ¼ cup Luau smoked bacon bbq sauce
  • ½ cup packed brown sugar
  • ½ cup canned pineapple chunks drained, juice reserved

Instructions

  • Place a large cooking pot on medium-high heat and cook the bacon in a little oil till browned. Remove from the pot.
  • Add the onion and peppers to the pot with more oil if needed and sauteé until tender.

  • Add the cooked bacon, drained beans, pineapple juice, and BBQ sauces to the pot and stir to combine.


  • Stir in the brown sugar.


  • Bring the pot to the boil then reduce heat to very low and cook for 2 hours, stirring often.
  • Stir in the pineapple chunks.


  • Cook for a further 10-15 minutes to heat the pineapple through before serving.
