Hawaiian Baked Beans
These Hawaiian Baked Beans are a delicious hot and smoky side dish that is so easy to make using canned pinto beans.

- 1-2 Tbsp vegetable oil
- ½ lb/225 g cubed bacon lardons
- 1 cup chopped red onion
- ½ cup chopped red bell peppers
- ½ cup chopped green bell pepper
- 3 16 oz/400g cans pinto beans, drained
- ¼ cup pineapple juice from the drained pineapple
- ¼ cup lava bbq sauce
- ¼ cup Luau smoked bacon bbq sauce
- ½ cup packed brown sugar
- ½ cup canned pineapple chunks drained, juice reserved
Place a large cooking pot on medium-high heat and cook the bacon in a little oil till browned. Remove from the pot.
Add the onion and peppers to the pot with more oil if needed and sauteé until tender.
Add the cooked bacon, drained beans, pineapple juice, and BBQ sauces to the pot and stir to combine.
Stir in the brown sugar.
Bring the pot to the boil then reduce heat to very low and cook for 2 hours, stirring often.
Stir in the pineapple chunks.
Cook for a further 10-15 minutes to heat the pineapple through before serving.
