This gourmet grilled cheese with caramelized onions, herb mayo, Gruyere, and Gouda is the ultimate comfort food!

Ingredients

  • 3 Tbsp mayonnaise
  • 1 tsp fresh parsley chopped
  • ¼ tsp dried oregano
  • 2 slices sourdough bread
  • 1 Tbsp softened butter
  • 2 Tbsp caramelized onions store bought or homemade
  • 2 slices gruyere cheese
  • ½ cup arugula leaves roughly chopped (or baby arugula)
  • 2 slices gouda cheese
  • 1 cup cherry tomatoes to serve

Instructions

  • Combine the mayonnaise, parsley, and dried oregano in a small bow and set it aside.

  • Butter the outside of the slices of sourdough bread.

  • Assemble the sandwich by layering the herbed mayo, caramelized onions, gruyere, arugula, and gouda between the non-buttered sides of the bread.

  • Place the sandwich buttered side down in a non-stick frying pan and place over medium-low heat. Cook for 6-7 minutes on each side until golden brown and crispy.
