Ingredients

Dry Ingredients

  • ¾ cup coconut flour
  • ½ tsp sea salt
  • ½ tsp bicarbonate of soda
  • 1 tbsp pumpkin pie spice

Wet Ingredients

  • 6 eggs
  • 3 tbsps coconut oil butter or ghee (melted)
  • ½ cup honey
  • ½ cup unsweetened apple sauce suggest a jar of baby food!
  • 1 tbsp vanilla extract
  • 1 tbsp black treacle

Instructions

  • Preheat the oven to 350F/180C/Gas 4.
  • Grease a 2lb loaf tin.
  • Combine the dry ingredients in a large bowl.
  • In another bowl, whisk together the wet ingredients.
  • Pour the wet ingredient mixture into the dry, and stir until evenly combined.
  • Pour the batter into the prepared tin and bake for 65-70 minutes until cooked through (check by inserting a skewer into the centre).
  • We think it’s best eaten warm!
  • Wrap in cling film and store in the fridge.
