Ingredients

  • 290 g plain flour
  • 3 tsp baking powder
  • ½ tsp bicarbonate of soda baking soda
  • 110 g caster sugar
  • 1 egg
  • 180 ml skimmed milk
  • 60 ml sunflower oil
  • 400 g over ripe bananas about 4 bananas
  • 150 g mixed dried fruit and nuts

Instructions

  • Preheat oven to 180°C/350°F/Gas4. Place 13 mini loaf cases onto a baking/cookie sheet and set them aside.
  • In a bowl, sift together the flour, baking powder, and bicarbonate of soda. Add the caster sugar.
  • In another bowl, whisk the egg, milk, and oil together.
  • Peel the bananas, and mash them with a fork. Add the mashed bananas and wet ingredients to the dry ingredients.
  • Use a spatula or wooden spoon to combine the ingredients.
  • Fold the dried fruit and nuts into the mixture.
  • Divide the mixture between the mini loaf cases.
  • Bake for 20-25 minutes or until an inserted cocktail stick comes out clean. Enjoy the mini banana bread loaves warm from the oven, or transfer them to a wire rack to cool.
