Ingredients
4large tomatoessliced ¼-inch thick
12oz340g fresh Mozzarella (one large ball), sliced ¼-inch thick
1large bunch fresh basil
1cupof balsamic vinegar
3Tbsphigh-quality extra virgin olive oil
Sea salt and black pepperto taste
Instructions
Add a slice of tomato to four salad plates. Top each slice of tomato with a slice of fresh Mozzarella and a basil leaf. Repeat this pattern until you’ve added 1 tomato and approximately 3 oz (85g) of Mozzarella to each plate. Finish each arrangement with a tomato slice on top. Set aside.
To make the balsamic glaze, heat one cup of balsamic vinegar over medium-high heat until it begins to boil. Reduce heat and simmer until the liquid is reduced to about 1/3 of its original volume, stirring continually. When the liquid becomes thick and syrupy, it is ready to use.
Remove from heat and cool slightly. Drizzle the olive oil on top of each salad, followed by the warm balsamic glaze. Season with salt and black pepper, to taste, and garnish with additional sprigs of fresh basil, if desired, and serve immediately. Enjoy!
