Ingredients

  • 500 g lean beef mince 5% fat or less
  • Low-calorie cooking spray
  • 2 onions diced
  • 4 garlic cloves crushed
  • tsp dried red chilli flakes
  • 1 Tbsp ground cumin
  • 2 tsp dried oregano
  • 2 red bell peppers deseeded and diced
  • 250 g chestnut mushrooms finely chopped
  • 3 Tbsp tomato purée
  • 1 beef stock cube
  • Salt and pepper
  • 1 400g can chopped tomatoes
  • 500 ml water
  • 1 400g can black beans, drained and rinsed
  • 375 g dried long-grain rice

Instructions

  • Spray some cooking spray into a large saucepan, and brown the mince over medium-high heat. Drain off any liquid and transfer to a bowl. Cover and set aside.
  • Return the pan to the heat and spray with more cooking spray. Add the garlic, chilli flakes, cumin, oregano, and a splash of water and fry for 3 minutes
  • Add the peppers and mushrooms to the pan and continue to cook (add more cooking spray and/or water as necessary) and cook for 10 minutes until softened.
  • Add the mince back to the pan. Add the tomato purée and crumble in the stock cube. Season with salt and pepper to taste. Fry for 2 minutes.
  • Add the chopped tomatoes, water, and black beans and bring to the boil.
  • Reduce to a simmer and cook for 30 minutes.
  • Meanwhile, cook the rice according to the package instructions.
  • To serve, divide the rice between warmed plates or bowls and top with the chilli con carne.
