½cupoil
2large eggs
½cupchocolate frosting
8ozmelting chocolate
1cupcrushed candy canesdivided
Instructions
Preheat oven to 180C/350F/Gas 4 and spray a 13" x 9" baking pan with baking spray.
Follow the directions on the back of the box to prepare the brownie batter.
Pour batter into prepared pan and bake for 24-26 minutes or until a toothpick comes out with few crumbs.
Allow the brownies to cool completely.
Crumble the cooled brownies into a large bowl.
Mix the chocolate frosting into the brownie crumbs to form a dough.
Add half of the crushed candy canes and mix in well.
Use a small ice cream scoop to scoop out some dough and roll into a ball.
Place onto a lined cookie sheet and refrigerate for 1-2 hours.
Place the chocolate wafers into a large microwave-safe bowl, melt in 30-second increments, stirring in between, until the chocolate is melted and smooth.
Use a fork to dip the brownie balls into the chocolate and roll until fully coated.
Pick up the brownie ball with the fork and lightly tap to remove extra chocolate.
Place the chocolate-covered ball onto the cookie sheet and sprinkle a little bit of the crushed candy canes on top.
Repeat steps 11 through 13 with the remaining brownie balls until they've all been decorated.
Return to fridge to allow the chocolate to harden before serving
