These easy to make breaded chicken nuggets will be a hit with the whole family. Serve with your choice of sides.

Ingredients

wholemeal bread roll
1
tsp
mustard powder
2
tsp
dried mixed herbs
Salt and pepper
2
medium eggs
4
skinless
boneless chicken breasts, cut into nugget size pieces
Low-calorie cooking spray
Instructions
Preheat oven to 200C/400F/Gas 6 and line a baking tray with greaseproof paper.
Tear the bread roll into pieces and place into a food processor. Whizz to form fine crumbs and transfer to a shallow bowl.
Stir in the mustard powder and herbs and mix well. Season with salt and pepper.
Crack the eggs into a shallow bowl and beat lightly with a fork.
Dip the chicken pieces in the egg, then roll in the seasoned breadcrumbs. Coat each piece evenly.
Place onto the prepared baking tray and spray with cooking spray.
Bake for 15-20 minutes or until the chicken is cooked through.
Serve with your choice of sides.
