Breaded Chicken Nuggets

These easy to make breaded chicken nuggets will be a hit with the whole family. Serve with your choice of sides.

Ingredients

  • 60 g wholemeal bread roll
  • 1 tsp mustard powder
  • 2 tsp dried mixed herbs
  • Salt and pepper
  • 2 medium eggs
  • 4 skinless boneless chicken breasts, cut into nugget size pieces
  • Low-calorie cooking spray

Instructions

  • Preheat oven to 200C/400F/Gas 6 and line a baking tray with greaseproof paper.
  • Tear the bread roll into pieces and place into a food processor. Whizz to form fine crumbs and transfer to a shallow bowl.
  • Stir in the mustard powder and herbs and mix well. Season with salt and pepper.
  • Crack the eggs into a shallow bowl and beat lightly with a fork.
  • Dip the chicken pieces in the egg, then roll in the seasoned breadcrumbs. Coat each piece evenly.
  • Place onto the prepared baking tray and spray with cooking spray.
  • Bake for 15-20 minutes or until the chicken is cooked through.
  • Serve with your choice of sides.
