Ingredients

  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour plain flour
  • ½ cup whole milk
  • ½ cup beer
  • 2 tsp Dijon mustard
  • ½ tsp smoked paprika
  • 2 oz 50g cream cheese
  • 8 oz 225g sharp cheddar cheese, shredded
  • Sea salt and black pepper to taste
  • Thinly sliced scallions for serving
  • Pretzels for serving

Instructions

  • Melt the butter in a medium saucepan over medium heat. Add the flour and cook, constantly stirring, for 1-2 minutes to cook out the raw flour. It will turn into a thick paste.
  • Slowly pour the milk into the pan, constantly stirring for 1-2 minutes until the mixture thickens.
  • Stir in the beer, Dijon, and smoked paprika and continue cooking for 1 minute.
  • Add the cream cheese and Cheddar, and continue cooking while constantly stirring until the cheese has melted.
  • Taste and adjust the seasoning with salt and pepper, if desired. Transfer to a serving dish and top with fresh scallions. Serve alongside pretzels, and enjoy!
