BBQ Portobello Mushroom Burgers

Ingredients

  • 4 large portobello mushrooms cleaned and stems removed
  • 1 Tbsp olive oil
  • 4 Tbsp BBQ sauce
  • 4 hamburger buns
  • 4 Tbsp mayonnaise
  • 8 lettuce leaves
  • 1 large tomato thinly sliced
  • 1 small red onion thinly sliced
  • 2-3 pickles thinly sliced
  • Sea salt and black pepper to taste

Instructions

  • Preheat your grill to approximately medium-high heat.
  • Brush the mushrooms on both sides with olive oil and grill for 4-5 minutes on each side until just fork-tender.
  • Brush the mushrooms with BBQ sauce and season to taste with salt and pepper. Grill 1-2 minutes on each side and transfer to a warmed plate. Set them aside.
  • Spread a tablespoon of mayonnaise on each burger bun (you can toast the buns if you wish). Top each bun with a BBQ grilled mushroom, lettuce leaves, sliced tomatoes, red onion, and pickles as desired. Serve immediately and enjoy!
